Chicken Enchiladas with Chef Maya Culinary Fitness for Kids

Preheat oven to 350

 

Spray pan coating on baking dish

 

Have large pan with 1” of water to steam chicken

 

Place chicken breasts in pan to steam/poach

 

Begin making pico de gallo by slicing tomatoes as instructed or as you know how and placing in bowl

 

Add other ingredients to pico

 

Cover and put pico in the refrigerator

 

Drain chicken, remove from pan onto cutting board

 

Using 2 forks, begin pulling the chicken apart

 

Place olive oil and green onions into a sauté pan

 

Add cilantro leaves

 

Add shredded chicken and salt and pepper

 

Add enchilada sauce to the bottom of the baking pan AND shredded chicken and stir chicken

 

Assemble enchiladas by dipping tortillas in sauce and adding chicken

 

Add shredded cheese(mild cheddar or jack)

 

Fold enchiladas in half and add more sauce and cheese

 

Bake enchiladas to the oven until cheese is melted, about 15 minutes

 

Remove from oven and plate and serve hot
