Cut peppers as instructed
Saute peppers, onions, dried thyme in olive oil in saute pan over medium high heat until onions are translucent.
Add garlic and saute for 1 more minute
Add salt and pepper
Add wine to pan and tomatoes
Allow to stew for about 3-4 minutes
Place cod fillets right on top of peperonata and cover with lid.
Cover and reduce heat to medium.
Cook on stove top for about 6 minutes or just until fish is flaky.
Remove lid and fish from pan.
Finish sauce with vinegar and chopped fresh basil.
Ladle sauce over fish and serve hot.
