Braised Lamb Shanks

Preheat oven to 350

 

Preheat heavy bottom pan on medium high heat for braising shanks

 

Salt shanks thoroughly

 

Sear shanks on all sides in hot pan

 

Cut vegetables and aromatics

 

Remove shanks from pan and reserve on side

 

Add vegetables to pan with oil and fat from searing step

 

Add aromatics and stir thoroughly

 

Add stock and wine

 

Add shanks back to the pan

 

Cover with foil tightly and add to oven

 

In 1 hour, remove from oven and flip shanks

 

Re-cover pan and add back to the oven

 

Remove from oven

 

Strain sauce

 

Plate with your favorite accompaniments (I recommend roasted red potatoes with fresh herbs)
