Cutting Carrots

  • Peel skin of carrot.
  • Cut off tops and bottoms.
  • Cut carrot in half.
  • Cut bottom slice off carrot to square it off and make it safe to cut.
  • Start cutting down to make large slices.
  • Start cutting julienne strips off of the slices.
  • For brunoise cut(fine dice), take your julienne strips and cut into little 1/8” x 1/8” squares.
